Almond Chicken Salad

4 Chicken Breast (bone and skin removed)0.5 cup Soy Sauce1 Cup Orange Juice1 tsp Salt0.5 cup Yellow Mustard0.8 cup Honey1.2 cup Raw Cnions, sliced3 tbsp Olive Oil4 cups Romaine Lettuce1 Cup Whole Almonds
Makes 8 servings.
Chicken:
Cut the chicken into fajita like pieces. Let stand in a large bowl along with the orange juice, soy sauce and salt. Slice the onion and put it in a large saucepan with the oilive oil. Simmer for about 2 minutes, then add the chicken (including its juice). Cook for 25 to 30 minutes, or until chicken is done.
Dressings:
*Mix Yellow mustard and honey until well blended (tastes a lot better than any honey mustard you can buy!).
*Put the almonds in a skillet and cook (without oil or any grease) until brown.
Serving:
Place the lettuce in a plate, put the chicken on top of it and top it with the honey mustard and almonds. Tastes great!
