Winter Squash & Yam Bake

Ingredients
1 1/2 lbs Winter Squash, peeled and cubed4 Sweet Potatoes or Yams, peeled and cubed1 clove Garlic, peeled and crushed1 Tbsp chopped, fresh Thyme1 Tbsp extra virgin olive oilsalt and black pepper, to taste4 oz whole almonds1/2 cup pecan pieces
Directions
Preheat oven to 325F
Place the squash and sweet potato cubes in a roasting pan. Sprinkle with garlic, thyme and oil. Season. Cover with foil and bake for 30 minutes.

Remove from oven, add the almonds, stir, and return to the oven, uncovered, for another 10 minutes

Sprinkle pecan pieces over top of dish. Return to oven for 5-10 minutes or until the top is lightly browned.
