Beef Pot Roast with Mushroom Gravy

2lbs. Lean Beef Roast 2 cans Healthy Request Mushroom soup1/2 packet Onion soup (soup/dip packets)1/2 cup water4 large potatoes peeled and cut in half6-8 medium carrots cut in half
1. Preheat oven to 400 degrees.
2. Heat a Dutch oven type pot on top of the stove over medium high heat. Place beef roast in dutch oven pot. Sprinkle half a packet of onion soup mix over the roast. Pour two cans of mushroom soup into pot and half a can of water. Add in vegetables and bring to a boil to bring up temperature of the meat (aprox. two minutes).
3. Place in the oven for 30 minutes at 400 degrees F. Reduce the heat to 325 degrees F and cook for 1 1/2 hours.
