whole-wheat homemade bagel

# 2 1/2 cups bread flour ( for whole-wheat bagel: 1 cup whole-wheat flour + 1 1/2 cup bread flour)# 1/2 teaspoon dry yeast# 1 tablespoon sugar# 1 teaspoon salt# approx. 1 cup warm water(varies depending on type of flour and weather)
1. Put flour, sugar, and salt into large bowl and mix .
2. Add yeast and water little by little, then knead together ingredients with hands until its manageable.
3. Take out the dough onto a flat kneading surface. Knead until the dough is no longer lumpy and powdery, approximately 15min.
4. Cut dough into 6 pieces. Shape into a ball. Cover with plastic wrap or a damp towel to prevent drying and let rest about 20 minutes.
5. Shape the dough. Roll out the dough into a rope and tie the ends together.
6. Cover the bagels with plastic wrap and let rest for about 20 minutes (30-40 min during winter time)
7. Then, fill a frying-pan with water and a teaspoon of sugar or honey and bring to a simmer. Preheat oven to 190 degree Celsius.
8. When the dough is ready , carefully drop them into the water and let them simmer for about 15 seconds on each side, flipping them only once. The bagels should float.
9. Take the bagels out and blot excess water. If you would like to add toppings, do so now. (For toppings such as sesame, dump out the toppings on a small plate and gently press the top of the bagel into the topping. )
10. Put the bagels onto a baking sheet or spread olive oil on the baking tray and let bake until brown, approximately 15-20 minute.
