Tasty Salmon Muffins

Ingredients
12 ounces of salmon2 eggs2 tbsp onions2 tbsp green bell peppers2 ounces cheddar cheese, shreddedSalt and pepper to tasteOld Bay Poultry Seasonning
Directions
Preheat oven to 350 F.

Mix all ingredients together and divide amongst 6 well-greased muffin cups. Bake at 350 for 30 minutes until puffed, set and slightly brown around the edges.

I also made mayonnaise dipping sauces (calories not included in this reicpe):
*Garlic, chipotle-lime seasoning, salt and pepper in mayonnaise.
*Dill weed, lemon zest and lemon juice in mayonnaise.

    These are really good. I used frozen seasoning blend which contains chopped onion, red and green peppers. Do you think they would freeze well. I would like to try freezing them but every time I make them they just disappear. My husband could eat all of them in one sitting! - 11/3/09

    This was very good. I used egg beaters instead of eggs and it worked well. I did make what I guess was a silly mistake - I used regular salmon steaks, not canned salmon. Mixing is a bit difficult with salmon steaks :-). - 7/22/09
