Greek-Style Shrimp & Orzo Soup

1 Tbsp olive oil1 large onion3 cloves garlic1 sweet bell pepper2 cups chicken stock1 tbsp chopped fresh oregano2 cups water1 can tomatoes1/2 cup orzo1 lb raw shrimp2 tbsp fresh lemon juice3/4 cup crmbled low fat fetagarnish: chopped fresh parsley
makes 4-6
Heat oil
Add onion, garlic and pepper, saute for 4 minutes
Add stock, oregano, water, and tomatoes with juice.
Bring to boil
Add orzo and cook for 10 min.
Stir in shrimp and lemon juice, simmer for 3 minutes or until shrimp are opaque in color.
Season with salt and pepper and serve with crumbled feta chees and parsley
