Mediterranean Chicken with Rosemary Orzo

Ingredients
1 lb Chicken Breast, no skin, 2 cloves Garlic 1 can (14.5 oz) Campbell's low sodium chicken broth.5 (1/2) cup Water1 tsp (or more to taste) dried Rosemary (or 1 Tbsp fresh)1 tsp (or more to taste) Italian Seasoning.5 tsp Salt1.5 cup (2 med) Zucchini, sliced and quartered3 Plum Tomatoes or 1.5 cups Red Ripe Tomatoes1 medium Bell Pepper (any color)8 oz (1 1/3 cups) Orzo, Barilla, uncooked
Directions
Spray 10-inch skillet with cooking spray; heat over medium-high heat. Add chicken; stir-fry about 5 minutes or until brown.

Stir in garlic, pasta and broth. Heat to boiling; reduce heat. Cover and simmer about 8 minutes or until most of the liquid is absorbed.
(I usually taste it about now to make sure there is enough spice for me.)

Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 5 minutes, stirring once, until bell pepper is crisp-tender and pasta is tender.

Makes 4 servings.

    This was really really good. I used homemade chicken broth and dried herbs. I used medium grain white rice instead of orzo. So good. Sprinkled some colby jack cheese on top. Feta would of been really good too! - 10/21/08

    I really enjoyed this! I found that while browning the chicken, it rendered lots of liquid, i drained it and added it back with the broth and some sun dried tomatoes. I used fresh rosemary. Delish!!! - 10/13/08

    This is sooo delicious!! It is also quick to make and convenient that it is a one-pot meal.

    I used fresh rosemary and added a tablespoon of fresh grated parmesan. I also recommend adding a couple of tablespoons of white wine or lemon juice at the end, for a just a hint of acidity. - 10/6/08

    Large portion size which is nice. Does not say how to do the chicken so I cubed which made the chicken kind of dry. Next time will try with full chicken breasts. - 10/5/08

    I cut mine into 1 inch strips. I am sorry I didn't state that. I also wanted to mention that last time I made this I added some Italian Seasoning (about 1 tsp along with the Rosemary) for a stronger taste and it was great! Thanks for the comment!

    This was a hit at my house! This recipe gave us very generous portion sizes, so I actually got another portion out of it. I liked the idea to add Feta cheese and kalamata olives, I may have to try. - 9/5/11

    I went with the general idea of the recipe but substituted ff sundried tomato feta and laughing cow stuffed chicken breasts instead of the plain chicken. I also stirred in english peas and sun dried tomatoes instead of the veggies called for in recipe as my husband doesn't like squash. Great dish! - 11/9/10

    LOVED THIS! It's now in the regular rotation. I did add the kalamata olives and the lf feta cheese on top. Amazing!
