1/2 cup Carrots, chopped 1 cup skim Milk1 cup Chicken Broth1/8 tsp white Pepper2 cloves Garlic, minced*1 md Potato, cubed*2 cans (15 oz) Del Monte Sweet Corn Cream Style (recipe figured with this brand - it is lower in calories)1/4 cup dried potato flakes
Combine all ingredients in stock pot except for dried potato flakes. Cover and cook for about 25 minutes, until vegetables are tender. Add potato flakes and stir well to combine. Cook mixture, uncovered for 5 more minutes, or until chowder has thickened and potato flakes have dissolved. May be topped with a sprinkling of cheese of your choice (not figured in nutritional calculation) Makes 7 one cup servings
