Low-Fat Slow Cooker Garlic Mashed Potatoes

5 pounds red potatoes2 teaspoons chicken bouillon granules6 cloves garlic, minced8 ounces reduced-fat cream cheese8 ounces reduced-fat sour cream1 teaspoon ground black pepper
Scrub the potatoes and cut them into chunks. Do NOT peel.
Rinse well and transfer to a stock pot. Cover with cold water by 6 inches, add the minced garlic and bouillon granules. Bring to a boil and cook approximately 10 minutes, or until potatoes are fork-tender.
Drain, reserving liquid. Add cream cheese and sour cream to pan and mash potatoes, adding reserved liquid as needed to achieve desired consistency.
Transfer to a slow cooker and cook on low for 2 hours. Before serving, stir well and season with ground black pepper to taste.
Makes approximately 18 (1/2 cup) servings.
NOTE: Can be prepared up to the point of transfer to slow cooker and refrigerated for up to two days. However, if you do this, you will need to increase the slow-cooker cooking time to 3 or 4 hours and add more liquid.

I created something very similar at thanksgiving dinner because we were short on pots. I cooked the potatoes on HIGH in the slow cooker for about 3 hrs, while the turkey roasted in the oven. Drain, add other ingrediented, and mash with a hand mixer right in the ceramic pot, then keep on very low. - 12/15/09

That's helpful to know. The whole shebang can be done all in the slow cooker. I wasn't sure about using the mixer inside the crock for fear of chipping the glaze. That wasn't a problem?

Really enjoyed this recipe! Didn't use the crockpot. Just boiled potatoes, drained and then added remaining ingredients, mashing all together. Got great reviews from my family. Will make again :) - 1/25/10

Delicious! I made a modified version of this recipe--boiling the potatoes on the stove instead and using garlic powder instead of minced. Used this as the potatoes on a casserole but saved some just to nibble on. They were outstanding--and the casserole was better than ever! Thanks! - 12/10/08

YUM! Made them for Christmas dinner and they were terrific! We actually didn't use the slow cooker at all, just did it all in the pot and it only took 30-ish minutes. I was wondering why the cooker, does it do something else? - 12/29/09

I developed the recipe as a make-ahead dish that could be easily transported to covered-dish dinners. That is the only purpose of transferring them to the slow cooker.

I'll be right over to check out that soup recipe. I love soups and broccoli-cheese is one of my favorites.
I sometimes use the leftovers as a base for what we call baked potato soup. When I get some time I'll have to post that one, too.

Thanks for taking time to rate my recipe. You may want to adjust the seasonings to your family's tastes. The addition of fresh herbs or salt may perk it up for you. I don't cook with much salt due to being on a sodium-restricted diet.
