Venison Stir-Fry

1/2 lb. venison tenderloin-cut into bite sized pieces6 Tbs marinade 1 C dry quinoa-rinsed thoroughly2 C beef broth1 green pepper- cut into strips1 onion-cut into strips1 C sliced mushrooms1 Tbs olive oil-divided1 Tbs Creole seasoning**I use low-fat broth and skimp on the olive oil
Servings--4
Cut venison tenderloin into bite-sized pieces and marinate 2-4 hours
Rinse quinoa thoroughly.
Combine with beef broth and simmer 20 minutes in covered pan.
Heat 1/2 olive oil in large skillet and stir-fry the venison. Remove.
Heat the rest of olive oil and stir-fry the green peppers, onions and mushrooms.
Add the creole seasoning
Combine with the meat.
Serve over the quinoa.
