Pork chops with Spanish Rice

Ingredients
4 lean pork chops, fat removed1/2 C green pepper, chopped1 C onion, chopped3/4 C rice2 cans petite diced tomatoes1 tsp chili powder
Directions
Remove fat & render down in frying pan, remove. Add chops & brown. when browned; add remaining ingredients and cook on low heat for 30-35 minutes.

    This is so close to what I make, except that I add some garlic to it. I also bake it in the oven which give the rice a bit of crispiness around the edges of the pan...that's what my DH likes (crispiness). I place the pork chops on top of the rice and cover to bake it in the oven. - 5/22/10

    This was delicious!!! We all loved it!! I normally don't like rice and tomatoes, but this was great! I had a little problem with my stove, which caused us to cook the rice longer, so the pork chops were a little chewy. But that's not the recipe's fault. - 4/5/09
