Buffalo Style catfish nuggets (no frying necessary!)

Ingredients
2T Flour1t garlic powder1t paprika1/2 t onion powder1/2 t salt1/8 t ground black pepper2 large egg whites, lightly beaten1 1/2 c coarsely crushed cornflakes1 lb catfish fillets, cut into 1/2" thick stripscooking sprayFor Sauce:1/3 c hot wing sauce1 t tabasco sauce (or equal)1/2 t worcestershire sauce1 T butter
Directions
Makes 8 Servings

Preheat oven to 400 degrees F.

Combine first 6 ingredients in shallow dish. Place egg whites in separate shallow dish. Place cornflakes in third shallow dish.

Dredge each catfish strip in the following order: flour - egg - cornflakes. place on baking sheet coated with cooking spray.

lightly coat strips with cooking spray. bake for 10 minutes or until crispy and cooked through, turning once.

For Sauce:
Combine hot sauce, tabasco, worcestershire sauce in small saucepan. Bring to a boil. reduce heat, simmer for 1 minute. drizzle over fish.

serve with celery, carrots, and fat free ranch or bleu cheese dressing.
