Makes 8 peppers

Wash and cut tops off peppers - clean out seeds from inside. Pat dry with paper towel. Mix ground beef, crackers, eggs and any spices together. Stuff well mixed beef mixture into each pepper. Drizzle with olive oil and bake in a covered dish @ 400 for 60 minutes. Remove lid and bake for another 5-10 minutes until cooked through.

* Sometimes I add cheese or salsa on top for the last few minutes of cooking. I also sometimes add BBQ sauce to the meat mixture...this is a basic recipe that you can modify based on your own tastes.
