Ingredients
Cauliflower, raw, 1 head, medium (5-6" dia) Sour Cream, .25 cup Butter, salted, 2 tbsp
Directions
Steam cauliflower until soft. Place cooked cauliflower in a pot and heat to remove excess moisture. Puree cauliflower in food processor and add butter and sour cream.

    This is a MUST for a south beach style diet! I've always made mine with cauliflower, butter, onion and garlic powder, AND... add a can of white kidney beans to the cauliflower before you mash. It is the closest thing you'll ever get to real potatoes without the potatoes. Try it on Shepherds Pie!! - 6/9/11

    I love cauliflower and eat it often but by no stretch of the imagination is it anything like potatoes and is much better not mushed up into a soggy wet mess. The only similarity to potatoes I can see is that it is white, completely different taste and texture. - 11/11/14

    I also mix equal amounts of potatoes (with skin) and cauliflower, no sour cream, just skim milk. Not whipped, but "smashed". Garlic and pepper. Let others add their own butter. Everyone in my family who "hates" cauliflower, loves this. They have their vegies and always ask fo more - 11/17/10

    I cannot eat dairy and have used various recipes but this is very deliousious, using nondairy sour cream but my choice is non dairy cream cheese as it is just much more rich and delicious and about the same calories

    I really liked this recipe. So did several of our Thanksgiving dinner guests. Unfortunately my guys learned that it wasn't real potatoes, and did not consider cauliflower a good substitute for mashed potatoes. So, I ate their share. Yum!! - 11/26/10

    I LOVE these!!! I usually go to Ruby Tuesday just to get their faux mashed potatoes. Now I can make my own!!!

    I used fat free sour cream and calorie free spray butter. Still, they are great. Added garic, pepper, and salt of course. - 1/6/10

    I steamed the cauliflower, pureed it and stir-fried it with it with shallots garlic, cumin seeds, one sliced green chilli and turmeric powder. This was accepted more than the mashed version - 11/12/19
