Crunchy Cucumber Rounds

Ingredients
1 c. Red Apple finaly chopped1 can (8ozs.) unsweetened Crushed Pineapple, drained1/4 c. Pecans, toasted, finely chopped1/4 c. Reduced-Fat Sour Cream1/8 tsp. salt.3 med. Cucumbers.
Directions
Makes 4 dozen round cucumbers.
MAKE SURE YOUR CUCUMBERS SLICES ARE DRY SO THE FRUIT MIXTURE WILL STICK TO THEM.
1. In a small bowl, combine the apple, pineapple,pecans,sour cream and salt. Cover and refridgerate until chilled.
2. To score cucumbers, cut strips lenghtwise through the peel or use a vegtable scorer. Cut each cucumber into 16 slices. Blot with paper towels to remove moisture. Spoon 1 teaspoon of apple mixture on each slice. Can store in a tight sealed container for 5 days.
