Sweet Potato and Black Bean Chili

Ingredients
2 tsp olive oil1 small onion, finely diced1 small sweet potato, peeled and diced2 cloves garlic, minced1 tbsp chili powder2 tsp ground cumin1/4 tsp ground chipotle chili1/3 tsp salt, or to taste1 1/3 c. water1 15 oz. can black beans1 cup canned diced tomatoes2 tsp lime juice2 tbsp chopped fresh cilantro
Directions
1. In large saucepan, cook onion and sweet potato until onion is slightly softened, about 4 minutes.

2. Add garlic and spices and stir for about 30 seconds.

3. Add water, simmer gently covered 10-12 minutes (until potato is slightly tender).

4. Add beans, tomatoes and lime juice; increase heat and return to full simmer; reduce heat slightly and simmer until slightly reduced, about 4 minutes.

5. Remove from heat and stir in cilantro.

Makes 4 c. in total. For me, that's 3-4 servings. For my very tall friend, it was only two. Nutritional information is figured at 4 servings.
