Ingredients
4 pounds of baked potato, skins removed1 stick butter salted, melted4 ounces sharp cheddar, shredded8 ounces sharp 50% cheddar, shredded1/2 cup chicken broth1 cup fat freee half and halfpepper to tastefresh or freeze dried chives to taste
Directions
put the baked potatoes in a bowl and using a knife cut up until in small pieces. Add shredded cheeses and toss well. Add butter with chicken broth mixed in and half and half. Add pepper and chives and mix thoroughly. Put in a 13X9 and bake in a 400 degree oven until completely heated and browned to your liking.

    Sounds good to me. For those who think it's a "BAD" recipe because of the fat, I say, well, you can fit anything into your diet in small amounts, and it's good to have the calorie counts so you know where it can fit. - 12/19/08

    This is very similar to a recipe I make, I use fat free sour cream instead of the half and half. Cook about 1.5 hours for the full pan. - 12/18/08

    You bake them in the skin. When I peel the baked potatoes for the dish I usually leave a little of the skin but not everyone likes the skin.

    Just wanted to say this is great. Made it meat free by switching in roasted red pepper soup... i also cut out the butter and added 2 big cans of black beans minced garlic and lots of chives... so so good - 4/14/10

    245 calories for ONE side serving of mashed potatoes? You could eat an entire Lean Cuisine entree or main dish for the same amount! You have to be a serious mashed potato fan to spend that amount of calories on a single serving! Sorry! Don't think this is very healthy. - 12/21/08

    fat free half and half is half and half with the fat removed. It is available in the dairy case at most supermarkets.

    I don't consider 13.6 grams of fat to be excessive when part of a balanced meal. This dish tastes great and is very satisfying.

    This does not seem like a good recipe for folks wanting to change to a healthier lifestyle. It could be improved for those of us watching calories, sodium and cholestrol. - 12/14/08
