Red Potato Soup

Ingredients
6 medium size red potatoes, cubed2 cans Swanson chicken broth 99% fat free, no MSG. 1 can water1-1/2 cups chopped onion3 ribs celery, chopped1 cup 2% milk2 tablespoons dried parsley1 teaspoon minced garlicSalt and Pepper to taste ( I usually don't add salt)
Directions
In a soup pan, bring chicken broth and water to boil, put in potatoes, onion, and celery. Cook until potatoes are tender. With a slotted spoon get out about 1 to 1-1/2 potato's worth of cubes and mash on a dish and place it back in the pot to thicken the soup. Add milk, parsley, garlic, and pepper.

Makes 6 servings.
