Banana Bread

Ingredients
1 c mashed banana2/3 c sugar2 tbsp oil1/4 c egg substitute1 large egg1 3/4 minus 2 tbsp flour2 tbsp flax meal1 1/4 tsp cream of tarter3/4 tsp baking soda1/2 tsp salt8
Directions
1) Preheat oven to 350
2) Combine first 5 ingredients; beat with a mixer set to medium.
3) Combine flour, cream of tarter, baking soda, salt stirring with a whisk.
4) Add flour mixture to banana mixture, stirring until just moist. Spoon batter into an 8 X 4 pan coated with cooking spray.
5) Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean. Cool for 10 minutes.
