Darla's French Toast

Ingredients
Directions
2 large eggs2 slices whole wheat bread1/8 cup 1% milk1/2 tsp vanilla extract1/2 tsp Splenda (brown sugar)1/2 tsp cinnamon1/2 tsp nutmeg1 1/2 tsp extra light olive oil
Blend together all ingredients (except the bread and olive oil). Using a whisk, whip into a frothy blend. Pour this liquid into a shallow pie pan. Set aside.
Heat the oil in a medium sized skillet. When oil is ready, dip bread slices in liquid being sure to coat both sides of slices. Add to skillet. Pour any remaining liquid over the bread. Fry until cooked thorougly (bread might get puffy).
Serve with margerine and lite syrup.
Makes one serving.
