Deceptively Delicious Baked Zucchini Chips

Ingredients
1 large Zucchini - long, 1/4 inch slices 1 Tbsp salt1/2 cup Sweet potato puree3 Tbsp milk (soy or regular)1/3 cup Post Grape-Nuts Cereal2 Tbsp Flax Seed Meal (ground flax)10-12 Multi-Grain Saltine Crackers1/4 tsp Garlic Salt5 basil leaves or (1 Tbsp dried basil)
Directions
Slice zucchini in long 1/4 inch slices. Salt both sides of each slice and let sit while prepping the next items.

Mix puree & milk in first bowl.

Chop the flax seed, grape nuts, saltine crackers, galic salt and basil in a food processor or blender and place in large shallow bowl.

Drag the zucchini in the puree/milk mixture, then drag in the breading mixture.

In a frying pan over low-medium cook zucchini slices on both sides until brown and softened.

I made 20 slices and used almost all of the puree/milk mixture and breading. I could've made 2 more slices.
