Ingredients
1~ Tsp Olive Oil1/4 Cup~ Chopped ion2~ Cups Pre Washed packaged fresh baby spinach leaves1/2~ Cup halved cherry tomatoes1/2 Cup sea Scallops
Directions
1.~ In 10" nonstick skillet heat oil. Add onion; cook over med heat, stirring frequently, until softened, 1-2 minutes
2.~Add spinach & tomatoes;cook,tossing gently, until spinach is wilted,2-minutes
3.~ Push vegtable mixture to one side,making room in skillet or scallops.Add scallops;brown quickly on all sides.
4.~ Combine scallops with vegetable mixture; cook, tossing mixture until scallops are cooked through,about 1 minute. Serve immediately...
