Beef and Noodle Casserole

Ingredients
1 lb extra lean ground beef1 medium-sized onion, chopped1 medium-sized green bell pepper - chopped17-oz can whole kernel corn, drained4-oz can mushroom stems and pieces, drained1 tsp salt1/4 tsp black pepper11-oz jar salsa5 cups dry medium egg noodles, cooked (I used whole wheat noodles)1 cup fat free shredded cheddar chesse
Directions
1. Brown ground beef and onion in nonstick skillet over medium heat. Transfer to slow cooker.

2. Top with remaining ingredients in order listed.

3. Cover. Cook on low 4 hours.

    This was great!! I noticed that the ingredient details shows a can of diced tomatoes which are not on the recipe ingredients (?), I think next time I'll try adding the tomatoes for something extra, but even without them, this was very tasty and filling! - 4/21/08
