Flax Cookies

Ingredients
1/2 cup butter 1/2 cup Splenda (regular, NOT any of the Splenda blends) 1/2 cup lightly packed brown sugar 1 cup ground flax seeds 1 large egg 1 teaspoon vanilla 1 1/4 cups whole wheat flour 1 teaspoons baking soda 1 cup oatmeal (plain, slow cooking)
Directions
1. In a bowl, cream butter, sugar, and Splenda; add flax seed.
2. In another bowl, beat egg and vanilla together. Combine with flax mixture.
3. Mix flour, baking soda, oatmeal and combine with other ingredients.
4. Form dough into 1 inch round logs. Place in freezer and chill.
5. Preheat oven to 350°F.
6. Slice logs into 1/2 inch thick medallions.
7. Place on baking sheet leaving about 2 inches between cookies.
8. Bake 13 to 15 minutes.
