Simple Salmon Patties

1/2 medium onion1 stalk celery1/4 green bell pepper1 can pink salmon1 egg or equivalent egg substitute1/2 cup breadcrumbs1/2 tsp chili powder1/2 tsp old bay seasoning-optional
Finely chop the celery, onion, and pepper. Remove the skin and bones from a can of salmon. Combine the vegetables, egg, salmon, breadcrumbs and seasoning together. Using an ice-cream scoop, place scoops of the mixture onto a well-oiled griddle.
Cook about 5 minutes on each side (until browned). Remove from heat.
Top with horseradish or ketchup if desired.

I substituted tuna (didn't have salmon) and did this low-carb style with low carb breadcrumbs. Excellent recipe that got seconds from my husband. It's easy and fast. Note that there wasn't enough egg to bind, so I needed to add more eggs and the patties are fragile, so be careful flipping them. - 2/3/09

Great recipe! We started cooking up our patties on the gas grill if it's not too cold (under 15degrees around here!)-- it makes them even ligher in fat, and tastes great! - 1/23/09

The grill sounds good. I use a George Foreman Griddle. You might also like to try it with fresh salmon. I always use any leftover for them when I serve the fresh filets. I just remove the skin and flake it then add the other ingredients. I also sometimes use dill and other spices. enjoy
