Broccoli Tomato chicken

Ingredients
1 boneless skinless chicken breast1/2 small onion , sliced 2 cups frozen broccoli2 medium tomatoes , chopped1 pinch salt and pepper 2 tsp minced garlic
Directions
1 Cut chicken into bite-size pieces
2 Put garlic and onion in hot pan w/1 tbsp water. Cook. until semi soft
Add chicken.. Cook over medium heat,unti chicken is tender. Add broccoli and tomato. Sprinkle with salt and pepper.
3 Cover and cook until chicken is done and vegetables are hot.

    I too made a meal of this by adding penne. I had to increase all the portions to accommodate 6 people. I used fresh broccoli, cooking it in the microwave before adding it to the pan. I like that better than frozen. Our garden tomatoes and basil were a delight. Good recipe to get started! - 8/17/10

    I made this for lunch today. It was actually pretty tasy. I made it with whole wheat penne pasta so it would be a little more filling. Did't notice it was 2 servings...whoops. Still low in calories - even if you do eat both :) Thanks for sharing! - 5/15/09

    I used fresh broccoli and a lid to steam it with. The tomatoes and onions were great. I like the idea of adding basil to it. I sprinkled it with lemon juice and sauteed with some olive oil: 1Tblspn. I am thinking that next time I will also use some soy sauce. I like the recipe though. Very healthy. - 3/22/12
