Banana Wheat Germ Muffins

1 1/2 c all-purpose flour1 c toasted wheat germ1/2 c chopped walnuts (optional)1/2 c firmly packed light brown sugar2 1/2 tsp baking powder1/4 tsp ground nutmeg1/2 tsp salt2 lg eggs1 c mashed ripe bananas (2-3)1/2 c 1% milk1/4 c canola oil
Preheat oven to 400 degrees. Spray the insides and top of a regular-sized muffin pan with non-stick cooking spray.
In a medium bowl, thoroughly combine flour, wheat germ, walnuts, sugar, baking powder, nutmeg, and salt.
Beat the eggs in a large bowl. Beat in the mashed banana being certain to break up any large lumps. Beat in the milk and oil until smooth.
Add the dry mixture to the wet mixture and stir just until it is evenly moistened.
Spoon the batter into the prepared muffin pan. Bake about 17-22 minutes or until a knife inserted in centre of a muffin comes out dry.
Cool the muffins on a rack for a few minutes before serving.
