Crock-pot Tamale Pie

Ingredients
3/4 C. cornmeal1 1/2 C. milk1 egg, beaten1 lb. extra lean ground beef, browned1 envelope chili seasoning mix15 oz. can diced tomatoes15 oz can corn, drained1 C. shredded cheddar cheese
Directions
Brown your ground beef and drain any fat off. Put everything except the cheese in the crockpot and mix together well. Cover and cook on high for 1 hour and then turn heat to low for 3 hours. Add cheese and cook another 5 min. or until cheese is melted.

    I have never actually measured out the servings but with the amount that this recipe makes you would get at LEAST a 1 cup serving.

    This was good. The cornmeal makes it have a weird texture, not sure that is needed. I did use frozen corn as I don't like canned veggies. Also added a can of kidney beans. - 2/17/09

    Fantastic recipe! For a little extra kick you could use Rotel tomatoes & green chilis, and top with a dollop of lite sour cream, picante sause [like Pace] and chopped onions or chives.
