Lemon Rosemary Garlic Chicken

Ingredients
3 whole boneless chicken breasts, trimmed and cut into halves3 lemons, sliced5 cloves of garlic, sliced2-4 sprigs fresh rosemary1 tbsp canola oilblack pepper if desired
Directions
1) Preheat oven to 375F
2) Coat bottom of covered baking dish with oil (can be omitted if desired)
3) Line bottom of dish with lemons. Sprinkle sliced garlic on top of lemons. Gently lay sprigs of Rosemary over garlic and citrus.
4) Arrange chicken breast halves on top of citrus and herbs. Sprinkle with ground black pepper if desired.
5) Lower oven to 350F. Bake chicken 40-50 min, uncovering for the last 15 minutes of baking.
6) When centers of the thickest pieces are no longer pink and juices run clear, remove and let stand 10 minutes loosely covered.
7) Remove chicken breasts and serve, drizzled with juice from the pan. (Discard lemons and seasonings.)
Recommended sides include couscous, or whole grain mix, and vegetables of choice.

    I made this using the entire chicken so my family my enjoy it. I combined the seasonings in a separate bowl with a 1 tablespoon of canola oil. Lay the chicken in roasting pan with rack inside it to elevate the chicken. With breast side up separate skin and rub season on chicken. Cover w/lemon. - 1/18/09
