Panko Chicken Nuggets

Ingredients
Chicken 1 lbEggs 2 LargeSeasoned Bread Crumbs 1 ozPanko Bread Crumbs 1 oz
Directions
Preheat oven to 425F

Cut chicken into bite sized pieces.

Break eggs into bowl, mix thoroughly.

Add bread crumbs and panko to a different bowl, mix thoroughly.

Dip chicken into egg, covering all parts with egg.

Roll in bread crumb mix.

Place on cookie sheet.

When all chicken is coated, place in oven for 20 minutes.

These crisp up very well, for even crispier nuggets, you can grind your panko and bread crumbs a little, and broil them on high for about 1 minute per side. I really enjoy being able to have crispy "fried chicken" without all the fat.

I didn't list spices as everyone likes their own style for this kind of thing. I happen to like them with cayenne and a smidgen of cinnamon.

    I followed recipe, I had quite a lot of the panko mixture left. I think next time I will only measure 1 oz of each panko and Italian seasoning. I added some garlic powder and some cajun seasoning. Turned out really good and easy to put together. I will make again. - 9/21/20

    Very popular recipe with my better half. I use regular bread crumbs instead of Panko but add lots of spice. Sometimes add parmesan and add the calories in. Makes a nice fast food-ish recipe which is so much different than my regular healthier tasting ones. Very nice. - 4/18/12
