italian vinaigrette salad dressing

Ingredients
1/3 C. White (or red) wine vinegar3/4 tsp. dried oregano1/2 tsp dry mustard (or dijon?)1 tsp. salt1 pinch of black pepper1/8-1/4 C. Red onion, chopped very fine1 1/2 tsp. garlic, chopped1/2-3/4 C. Olive oilMakes about 1 C. for about 20 servings of 2 tbsp. each.
Directions
The mustard and the olive oil are variations i'm trying. The mustard because some people don't have/use dry mustard. and the olive oil variation because i'm trying to make it healthier. I haven't tried it yet, but i'm going to right now.

"Combine the red wine vinegar, oregano, dry mustard, salt and pepper in a blender. Add the onion and garlic. Blend together while slowly adding the olive oil. By adding the olive oil slowly it will emulsufly with the other ingredients creating a thicker vinaigrette.Let vinaigrette sit at room temperature for 30 minutes before serving. This is best made shortly before using."

Throw it with some romaine, feta, sliced granny apples, and dried cranberries. MMMMM!!

    It was very oily in my opinion so I halved to oil. I mixed red and white wine vinegar. I also doubled all the spices like oregano and salt and dried mustard. It is very yummy! I would also recommend adding some sugar... It was a little potent for me. But it has amazing flavor!!! It is wonderful!! - 3/26/11

    This looks like a great recipe, but I think the nutrition facts may be off. There would be only 8-2 Tablespoon servings in a 1 cup recipe instead of 20 which would more than double the fat and calories as calculated. - 1/28/11

    I just used what I had in the cupboard... no mustard, balsamic vinegar, and onion powder. Everything else was the same. I don't think I poured the olive oil in slow or let it sit a full 30 min, but over some baby greens it was dee-lish! Just like some of the best italian restaurants! - 6/10/09

    I used red wine vinegar and spicy brown mustard, it was very tart so added a small amount of sugar substitute to it. Not sure, but I think 20 Two TBS servings may not be right? I did have 1/3 c each evoo and vinegar though. - 5/2/12

    Very good dressing and very easy. I did cut back on the salt a very small amount, but since I have reduced salt in most of my recipes, it still tasted a bit salty to me. I think I will try 1/2 tsp salt the next time I make it. Recalculate the nutritional value or list each serving as 2.5 servings. - 2/23/12

    1 US cup equals 16 Tablespoons so I beleive everyone was off a bit not just the OP. Google it,every source I read gave this conversion so I am not sure where 8 came from. - 3/25/11

    Heavy on the oil but good. A little sweetener would be a good add. Also using the mixture of Italian seasoning omitting the oregano which is in the Italian seasoning. - 9/24/20
