Crab Cakes - Low Fat, Low Calorie

4 Pieces Bread, Oroweat Double Fiber1 Cup shredded Crab, Kanimi Seafarer1 Cup Egg Beaters4 TBSP Parkey Spray butter1/2 Cup finely chopped Red Onion5 tsp Splenda1 tsp Soul Food Seasoning1 tsp black pepper
Dry the bread crumbs prior to making meal; use oven to speed process if needed. Run the bread through a food processor to create bread crumbs. (Using low calorie bread, is what makes this healthier then regular bread crumbs).
In a bowl combine bread crumbs, shredded crab meat, egg beaters, spray butter, chopped onion and seasonings. Once mix, form into patties and put in skillet, sprayed with Pam, cook each side for about 4-5 minutes, or until brown on each side and fully cooked. Make sure patties aren't too thick or they won't cook through.
Top with fat free sour cream, mixed with seasoned salt and Splenda (not included in nutritional information).
