Honey, Dried Fruit and Oatmeal Muffin

Ingredients
1/4 C. honey3 large egg whites2 C. nonfat milk1 tsp. vanilla extract1/2 cup raisins1/2 cup dried cranberries1/2 cup pecans or walnuts1 cups whole wheat flour1 cup quick oats1 tsp. sea salt2 tsp. baking powder1 tsp. cinnamon
Directions
1. Preheat oven to 400.
2. In a large bowl mix honey, egg whites and oil. Beat until fluffy. Stir in milk and vanilla followed by nuts and dried fruit.
3. In a separate bowl combine dry ingredient then add to wet mixture stirring till combined.
4. Prepare muffin pan with floured cooking spray and fill to the top. Bake 20-25 minutes. Muffins should be firm but soft.
