Baked Flounder with Lemon Shallot Butter

Ingredients
4 flounder fillets1 tbsp lemon pepper1 tbsp dill4 tbsp butter1 shallot, minced1 1/2 tbsp lemon juice
Directions
Preheat oven for 325 degrees.
Mix together lemon pepper and dill.

Place fish in an oven safe dish, large enough so the pieces will not overlap. Sprinkle spice mixture on both sides of fish. The dish does not need to be greased in any way, the moisture from the fish will prevent it from sticking. Bake in oven for 10-15 minutes or until fish is opaque and cooked through.

In a saucepan, heat butter and shallot over medium low heat. You want to sweat the shallot and make it soft and sweet tasting; try not to get too much more than a slight golden color to it. Adding a dash of salt and pepper will help. Once the butter is melted and the shallot is soft, add the lemon juice and stir. Set aside.

For presentation, plate up the fish and top with a teaspoon of the butter mixture.

    What a flavorful recipe! Used Tilapia I had with no dill subbed Tarragon instead, but otherwise followed to a T, very delicious and low calorie big plus, will definitely make again! - 10/20/12
