Ingredients
1/2 cup(s) Quaker Oats Quick Oats Cereal 1/2 cup(s) fat-free cottage cheese 1/4 cup(s) Egg Beaters Egg Beaters 1/2 tsp baking powder 1/2 tsp vanilla extract 1 tbsp Sucralose 1 tsp ground cinnamon 1 small banana(s)
Directions
Preheat oven to 350. Spray muffin tins with nonstick cooking spray. Blend everything except the oats in a blender until smooth. Add the oats and blend for a little bit, you want the batter to be a little lumpy. Bake for 20-25 minutes or until toothpick inserted in middle comes out clean.

    I love the small yield and the muffins are moist and delicious, especially warm! They are lighter in color than I thought they would be, but perhaps this is because I left out the cinnamon. Thank you! - 7/5/12
