Baked Beer Batter Fish & Chips

Ingredients
For the Fish:2 tilapia filets (about 4 oz each)1/2 c. whole wheat flour1/2 t. baking soda4 oz. light beer1/4 lemon, juice1/2 t. black pepper For the chips:2 medium baking potatoes, with skin
Directions
I am adapting this from a traditional British F&C recipe. If you would like the traditional version, fry the fish & chips in oil and use regular beer and regular flour. It will cook quicker that way, but add about 200 calories a person.

Preheat oven to 400. Spray baking sheets with Pam or other cooking spray.

Wash potatoes. Chop potatoes into chip shapes and keep skin on. Rinse and allow to dry. Put the chips on the baking sheet and into the oven. (I prefer to season later, but if you want to add s&p do so).

Dredge fish in flour and coat well, leave it in the flour as you prepare the batter.

Combine: Flour, baking soda, and pepper in a large bowl. Add beer slowly and stop when batter is thick (no need to add all the beer). Whisk the batter to remove lumps. Add lemon (or malt vinegar instead). Mix.

Dip the floured fish into the batter and coat well. Then add them to the baking sheet with the chips. Cook for 20 min (turning once).

Serves 2. You can also use a griddle instead of the oven.

7 ww points per serving with the fish & fries/chips.
4 ww points for just the beer batter fish.

    Needs salt. I would also like to know how much beer to add - until "thick" is not very helpful. I think it could be pretty good, but it needs quite a bit of tweaking. - 8/24/14

    aweful...sorry will not make it again. followed directions to the letter, and the batter was doughy, fish did not cook through, batter itself was tasteless except for the pepper. really sorry. - 4/25/11

    The batter fell off the fish and the chips took 10 more minutes to cook, I'm not sure what I did wrong. I'll try this batter again but I think I'll just pan-fry the fish. - 6/20/09
