Feta & Spinach Egg Whites

Ingredients
3 egg whites2 cups Fresh Express Baby Spinach 1 1 Italian tomato, chopped (any tomato)1/4 c. chopped onion1/4 c crumbled feta cheesesalt & pepper to taste
Directions
Chop onion & tomato. Spray pan with cooking spray and put on medium heat. Cook onions until translucent.

Add 3 egg whites, tomato, spinach and cook until cooked through.

Just before you are ready to take off heat, take 1/2 of the feta cheese and throw in pan and melt.

Top with remaining crumbled cheese and salt and pepper to taste.

    I've been making this for over a year after having it at a restaurant. they called it 'Greek scrambled eggs' and it so rocks!
    I like to add olives (or garlic stuffed olives) into the mix, and red onion sliced into rings.

    I used 2 egg whites and one yolk, handful of spinach and reduced fat Tomato Basil Feta Cheese. It was simply delicious. I've never added feta to eggs before and was very impressed with the flavor. - 1/11/08
