Low-Carb Almond Pancakes

Ingredients
* 1 cup almond flour/meal * 1 tsp baking powder* 2 eggs* 1/4 cup water (for puffier pancakes, you can use sparkling water )* 1/4 teaspoon salt* 1 T sweetener (I use Stevia because sugar alcohols and artificial sweeteners are evil - if you use Stevia, you don't need as much sweetener because it's POWERFUL stuff!)
Directions
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little olive oil.

Makes six pancakes (10cm in diametre)

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories. (Spark calculates things a little differently since they don't have almond meal listed, so I selected ground almonds, which are slightly higher in carbs and fat).

You can use any toppings you want (keeping carbs in mind, of course) - mine tasted great with a sprinkling of sweetener and a tiny splash of lemon juice. YUM!

    I went and bought almond meal Saturday (very expensive!) and made them on Sunday! Yummy! Been on Atkins 2 mnths and craving something bread like. I ate them with peanut butter and sugar free syrup! I will make these again!! - 8/1/11

    Love, love, love! I made these but added a little almond extract to enhance the flavor. Very easy to double as well. My 16 year old daughter said "10, 10 make again!" Can't get much better than that. Lol. Although they do have a little different texture because of the almond flour but we didn't mind - 9/14/17

    Made these today. Only change I made was I used some Sugar free French Vanilla coffee syrup instead of water. They came out great! S/O said they were better than regular pancakes. Teen son said they were good but too dry for him ( Though neither me nor dad thinks they are dry) Very good! A keeper! - 5/25/14
