Banana-Nut Bread

Ingredients
  • 1 cup mashed ripe bananas
  • 1/3 cup low-fat buttermilk
  • 1/2 cup packed brown sugar
  • 1/4 cup margarine
  • 1 egg
  • 2 cups sifted whole grain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
Directions
1. Preheat oven to 350º F. Lightly oil a 9x5-inch loaf pan.



2. Stir together mashed bananas and buttermilk; set aside.



3. Cream brown sugar and margarine together until light. Beat in egg. Add banana mixture; beat well.



4. Sift together flour, baking powder, baking soda, and salt; add all at once to liquid ingredients. Stir until well blended.



5. Stir in nuts and turn into prepared pan.



6. Bake for 50-55 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pan.



7. Remove from pan and complete cooling on a wire rack before slicing.



Yield: One loaf--Serving Size: 1/2-inch slice

    Was easy to make and tasted really good. I did use half whole wheat flour and half white flour after reading a few of the comments though. I also added a half cup of applesauce to make it more moist. it turned out great! - 12/30/08

    This turned out so go that even my picky toddler ate it and my husband asked if I changed my original (full fat) recipe because he liked this one better!!! I used light margarine (because that's all I had) and 3 ripe mashed bananas and it was so moist and wonderful! I can't wait to make it again! - 1/25/10

    I tried this one yesterday. Very dry, so I adding 1/2 cup applesauce which helped with the dryness. Also changed the flour to 1 cup wheat and 1 cup regular flour. This made a big difference - 7/15/08

    Don't know what I did but mine turned out lumpy (seemed I couldn't help but overmix just to make sure the ingredients were blended) even after cooking. Tasted okay though. - 2/23/10

    Sounds very good but when I make it I will try the applesauce & in place of margarine I would use Olive Oil light butter,(something new) & half whole wheat flour, maybe the nuts add a lot of the fat, & could be ilimited or use half the nuts, but I will try it tomorrow.

    I agree; very easy to make. I didn't have any wheat flour and used 2 cups all purpose flour. Turned out great and not dry at all. Very moist. Family loved it and so did I. Will definitely make it again. - 1/1/09

    I swapped out magarine for unsalted butter as I don't dig margarine for personal reasons. I had no problem with moistness. It came out very delicious and my whole household loved it! - 7/16/08

    I used I can't believe it's not butter, light mediterranean blend, instead of margarine. It was delicious! Although next time I will remember not to run the electric chopper for quite so long - you can barely taste the nuts! - 7/10/08

    This recipe called for way too much flour. The bread tasted like whole wheat bread and was very dense. Not light and fluffy like a good banana bread. Next time I will modify the recipe to use a lot less flour. - 8/18/07
