Butavan Brownies

1/2 c pumpkin3 egg whites (large eggs)2 tsp butavan flavoring1/2 c unsweetened cocoa1 c granulated sugar1/2 c all-purpose flour1/4 tsp salt1/4 tsp baking powder1/3 c semisweet mini chocolate chips
Preheat oven to 350 degrees. Spray an 8x8 inch baking pan with cookie spray.

In a mixing bowl combine pumpkin, egg whites, and butavan. In a separate mixing bowl combine cocoa, sugar, flour, salt, and baking powder. Pour pumpkin mixture into dry ingredients and stir, just until wet. (about 50 strokes)

Pour mixture into prepared baking dish. Bake in the oven for approx 25-30 minutes, or until toothpick comes out clean.

Makes 16 - 2x2 inch squares.

Recipe Tip - The more you stir the ingredients, the more cake-like your brownies will be. The above recipe will not give you a completely fudge-like consistency - it is slightly more cake-like. Omit baking powder to help make a little more fudge-like.

Made these for a guest and they were fantastic! Exactly what my sweet tooth was craving without going overboard. Used whole wheat pastry flour and only 1/2 cup brown sugar -- didn't miss it one bit! The mini chips were perfect. Will try adding a tsp. of instant coffee for mocha brownies next time! - 1/30/11

So tasty! I was on a time constraint, so I wasn't able to find the butavan flavoring. I used butterscotch chips and mini chocolate chips sprinkled on the top. They were delicious thank you so much for the recipe!!! - 3/19/09

These are great even with cutting back sugar to 2/3 C. Used Swerve sugar replacement, Lilly stevia dark chocolate chips, (100) calorie amt.
