Pink Salmon (canned), 1 can 14 3/4 ozOnions, raw, 1/4 cup, chopped Yellow Cornmeal, 1/4 cup Egg, fresh, 1 large *Flour, white, 1/4 cup Kraft Mayo Light Mayonnaise (Mayo), 3 tbsp Pepper, red or cayenne, 1/4 tsp Salt, 1 dash Pepper, black, 1 dash Olive Oil, 1/2 tbsp
Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.
Add onion, cornmeal, flour, mayonnaise and egg. Stir until well blended.
Shape the mixture into patties about the size of an average burger or less.
Cook in oil in a skillet over medium heat until browned on each side. Turn once while frying.

This was delicious - I grew up with my Great-Grandmother's salmon croquettes and these really took me back.
Made mine using 4MSDEE's suggestion of baking (thank you for the degree/times!) and they ended up a little bit on the dry side - probably just my oven.
Still wonderful! Will fix again. - 10/13/08

This recipe is good. I don't use the mayonnaise, but add another 1/2 Tbl of oil. I also line a cookie sheet and spray with pam before placing patties on the cookie sheet and then coat the tops with pam. I bake in a 425 degree oven for 20 minutes, turn them over and bake for an additional 20 min. - 9/30/08
