Mexican Pizza

Ingredients
4 ounces taco meat (extra lean ground beef plus taco seasoning)1/2 cup Rosarita refried black beans2 Mission low carb soft taco size tortillas4 tbsp salsa1 taco bell hot sauce packet (optional)1/2 roma tomato, diced1/4 cup kraft free shredded cheddar cheesegreen onion, approx 1/2 of 1
Directions
Preheat oven to 350. Coat a pie plate with non-stick cooking spray. Place one tortilla in the pie plate. Spread 1/2 cup refried beans on the tortilla and then spread 4 oz of seasoned ground beef on top. Lay the 2cd tortilla on top of the ground beef. Bake in pre-heated oven for 10 minutes.



Remove from oven and let it cool for a couple minutes. Spread salsa over the top tortilla, then add the shredded cheese, and top with the diced tomato and diced green onion. Spread 1-2 taco bell hot sauce packet(s) on top to your liking. Place back in the oven for another 10 minutes.


Remove from the oven, and slice into 4 pieces. I used a pizza cutter and it worked great. Optional: can serve with sour cream.


This serves 2 people (2 slices each) mmmmm... Enjoy!
