Pork & Black Beans

Ingredients
2 garlic cloves, minced1/2 tsp. paprika1/4 tsp ground cumin14/ tsp salt5 oz lean pork tenderloin1 tsp. extra virgin olive oil2 tbsp. white vinegar15 oz can black beans, rinsed & drained1/2 carrot, finely diced2 tbsp lime juice1/2 tomato, diced1 red onion, chopped2 tbsp, chopped cilantro
Directions
combine garlic, paprika, cumin & salt; rub into pork

heat oil, saute pork until browned (2-3 mins) on each side. reduce heat & cook, covered, turning occasionally, until cooked through, about 10 mins. transfer to plate. halve pork lengthwise, then cut crosswise into thin slices.

add vinegar to pan drippings and simmer, stirring until acidity cooks off (about 2 mins). add beans, carrot, and lime juice; cook, tossing (about 2 mins). transfer to bowl. add pork, tomato, onion, & cilantro; toss to combine.
