Linda's Low Calorie Easy Vegetable Soup

Ingredients
6 Large Green Onions2 15 oz cans Diced Tomatoes1 Large Head of Cabbage2 Green Peppers1 Bunch Celery1 cup Shitake Mushrooms, or to taste1 Hot Pepper (serrano or any you choose)3 Cloves GarlicOlive Oil , 1 tbspChicken, Beef or Vegetable Stock/Bouillon , 8 cupsBlack Pepper, to tasteParsley. to tasteChoice of seasoning - Rosemary, Sage, Thyme, Tarragon or Oregano, to tasteWater, 2 cups plus to cover
Directions
Cut vegetables into small pieces. Add vegetables and olive oil to a stock pot and saute all until onion sweats. Add water to cover and bring to a boil for ten minutes total. Next, add 2 cups water, broth and tomatoes and reduce to simmer, cooking covered until vegetables are tender. Add seasonings ten minutes or so after starting simmer and choose seasoning that complements the broth selected.

If you want a different consistency, you may use additional water or broth.
