Peanut Noodles

Ingredients
Rice Noodles, 8 ozTofu, extra firm, 1 block Peanut Butter, smooth style, 3/4 cupGreen Peppers (bell peppers), 1/2 pepper, choppedPeppers, sweet, red, fresh, 1/2 pepper, choppedScallions, raw, 4 medium, sliced thinRice Vinegar 1/4 cupSesame Oil, 1/2 tbspPeanuts 1/3 cup, choppedGarlic, 3 cloves, crushedcrushed red pepper to taste1/2- 1 cup hot water
Directions
Mix peanut butter, vinegar, sesame oil, garlic and crushed red pepper. Mix in hot water to thin dressing out as desired.

Prepare noodles as directed.

Dice tofu. You can eat it raw but I saute it in a mix of canola and sesame oils.

Mix peppers, scallions, peanuts and tofu into the dressing. Add the noodles and toss.

Note: I've found it easier to use tongs and add the pasta straight from the pot. It loosens up the sauce a bit.

Serving sizes are rough. About a cup.
