Thai Shrimp Curry

Ingredients
1 tbsp. olive oil1 large shallot, chopped16 shrimp, cooked1-2 tsp. green curry paste1 can light coconut milk1 package frozen broccoli1 cup low sodium chicken broth2 cups cooked white ricesalt to taste
Directions
Heat the oil in a non-stick pan. Add the shallots and cook until they begin to brown, about 5 minutes. Add the curry paste and cook until fragrant. Add the coconut milk and broth. Simmer until reduced by 1/3. Add the frozen broccoli and bring to a boil. Add the shrimp and cooked until heated through, about 5 minutes more. Season with salt and serve over rice.
