Medieval 'Honey' Cake

Ingredients
1/2 c apple butter3 tbsp oil3/4 c agave nectar1 1/2 tbsp cider vinegar3/4-1 c water (use less with all whole wheat pastry flour)1 1/2 c flour (a-p or whole wheat pastry, or a combination)1 tsp baking soda1/2 tsp salt
Directions
Preheat oven to 350F/175C and line a muffin tin with papers.

In a large bowl, combine wet ingredients. Sift dry ingredients into wet and mix to incorporate.

Bake for 20-25 minutes or until a toothpick or knife inserted in the middle comes out clean. Can also be made as a cake - line an 8" square pan, bake for 30 minutes.
