French Onion Soup

Ingredients
Butter, salted, 1 tbspOnions, raw, 2 lbsChicken broth, trader joe's organic free range, 2 cup Beef broth, trader joe's organic, 2.25 cup Red Wine, 2 fl oz Thyme, fresh, 1 sprigParsley, 2 sprigs Bay Leaf, 1Salt, 0.5 tsp Balsamic Vinegar, 0.5 tbspBaguette, organic trader joes, 6.5 ozGruyere cheese, trader joes raw milk, 6.5 oz
Directions
1. Melt butter in large stock pot. Add sliced onions & 1/2 tsp salt. Stir to cook. Cover & cook for 30 min, stirring frequently.
2. Add Broths, wine, parsely, thyme, and bay leaf. Simmer 20 min. Discard herbs.
3. Stir in vinegar and adjust seasonings with salt & pepper.
4. Place 1.3 oz bread in dish, cover with 1 cup soup, top with 1.3 oz cheese and let cheese melt.
