Spinach Quiche to Go

Ingredients

1 package (10 oz) frozen spinach3 large eggs1/4 cup (1 oz.) shredded cheese:( 2% milk Mexican Four Cheese is good)1 Tablespoon mustardhot sauce
1 - Microwave (or thaw) the spinach and drain off the excess water
2 - Combine eggs, cheese, and spinach in a bowl and mix
3 - Line a muffin tin with 6 cupcake liners. Fill with the batter.
4 - Bake 350 degrees for 20 minutes.
5 - Put a splash of hot sauce on top. (OK - this may not be for everyone but it sure does give it a nice kick)

I too wasn't sure what to do with the mustard, so I mixed it in. It's ok as is, but with some modifications this will be great! I will add in more egg, definitely some spice - paprika sounds great, mushrooms, basil - lots of possibilities! And I used Pam instead of cupcake papers. - 11/18/10

very good, very simple -- I used minced broccoli instead, since it was what I had. The dash of hot sauce was a great suggestion. Next time I'll add the turkey sauage as well for a bit more robust flavor as someone else suggested. This is definitely a keeper. Thanks for the recipe! - 8/18/10
