I LOVE THE IDEA OF THIS! I modified the recipe though: 6 eggs for 6 quiches. I added some finely chopped raw onion, zucchini, tomatoes and mushrooms. Also added some fresh herbs (basil and oregano) and feta instead of shredded cheese. - 7/14/10

I make a double back and put them in the freezer. It is a healthy, easy meal for the morning on school days. - 6/27/10

I didn't read where anyone had any problems with these sticking to the cupakes papers!! I loved them, but was a real pain eating them! Next time I will either spray the papers or not use papers and just spray the muffin tin. I added a little of Paula Dean's House seasoning. - 7/14/10

It was great! I changed it up in a lot of small ways. I used some Neufchatel cheese along with cheddar. I also added a little bacon. Great with mustard! - 7/20/10

Note to self for when making, use cayenne pepper as alternative to hot sauce :) (Paprika is another alternative) - 7/14/10

This is definitely a recipe for Popey. I made the recipe just like it said, but will try adding other things to it - and using half Egg Beaters. - 7/15/10

I too wasn't sure what to do with the mustard, so I mixed it in. It's ok as is, but with some modifications this will be great! I will add in more egg, definitely some spice - paprika sounds great, mushrooms, basil - lots of possibilities! And I used Pam instead of cupcake papers. - 11/18/10

very good, very simple -- I used minced broccoli instead, since it was what I had. The dash of hot sauce was a great suggestion. Next time I'll add the turkey sauage as well for a bit more robust flavor as someone else suggested. This is definitely a keeper. Thanks for the recipe! - 8/18/10

Pretty good and such a great idea for breakfast on the go. But what became of the mustard that is listed in the ingredients? I ended up using Dijon and putting it in the egg mixture. - 7/15/10
