White Chili

Ingredients
1 medium onion, chopped2 T olive oil4 oz can green chiles, drained2 tsp cumin3 cans white beans1 can chicken broth
Directions
soften onion in oil, add chiles and cumin, stir for 2 minutes. Puree one can beans in blender, add puree, beans, and chicken broth to the onion mixture, bring to boil. Reduce heat and simmer for 10 minutes.

You can also add cooked chicken (not included in nutrition information)

    I made this yesterday...without the oil and only 2 cans of beans. I used a jalapeno instead of the green chiles and it was still very good and spicy. - 1/29/09

    I would love to try jalapeno, but my husband doesn't like a lot of spice. I bet it was good!
